
Ingredients
- 275g plain flour
- 1 tbsp cornflour
- 1 tso bicarbonate of soda
- 115g butter
- 50g granulated sugar
- 140g soft light brown sugar
- 1 egg
- 1 tsp vanilla
- 200g white chocolate chips
- 150g dried cranberries
WHITE CHOCOLATE & CRANBERRY COOKIE BARS
Time: Prep time - 15 mins. Bake time - 20-25 mins.
Festive tray bakes are always a must for me, they’re perfect for gifts and I get to eat all the off cuts 🙂 This is one of my Festive Tray Bake collection. White chocolate & cranberry cookies always make me think of Christmas. I’ve made these in bar form as it means the shape is easier to make gifts. You could of course just bake these as cookies if you prefer. And sub out the flavourings for whatever you want!
Method
Preheat the oven to 190C/170 fan.
Melt the butter, then add to a bowl with the sugars, and whisk to combine. Add the egg and whisk again until smooth.
Combine the flour, bicarb and cornflour. Fold in to the mix. It should look like cookie dough now.
Fold in the chocolate chips & cranberries.
Line a tin with baking paper and press the mix in to the tin as evenly as possible.
Bake for 20-25 mins until golden on top.
Leave to cool in the tin for 10 mins before cooling completely on a cooling rack.
Cut in to squares and store air tight!
