Ingredients

  • 1 red onion
  • 4 carrots
  • 2 medium sweet potatoes
  • Thumb sized piece of ginger
  • 300ml veg stock
  • 200ml coconut milk

This one is super simple, kind of thing you have time to make and eat on your lunch break if you’re working from home.

Method

Chop the carrots & sweet potato – leaving the skin on, slice the ginger. Dice the red onion (take the skin off that one mind you..). Place everything in a saucepan with the stock & bring to simmer.

When soft (about 12-15 mins), add the coconut milk and blend until smooth. Season to taste.
