• 6 dates
  • 6 tsp nut butter
  • 50g melted dark chocolate
  • bee pollen/chopped nuts

Prep time: 10 mins. Chill time: 1 hour.

I’m not sure this counts as a recipe but it’s definitely a schnaaaaack. Medjool dates are sticky and delicious and this combo hits different. You need the big medjools for these to be truly wonderful. You can use whatever type of nut butter you fancy with these, I like almond-coconut best (but that’s because I like anything with coconut), pistachio is also a great choice. They also keep really well so they’re a good one to have in the fridge ready to go.

Slice each date in half down one side to allow you to remove the stone.

Add a tsp of nut butter in to one date, then dip half way in to the dark chocolate.

Finish with a sprinkle of bee pollen/chopped nuts.

Repeat with each date, leave to set in the fridge until the chocolate is hard. Store in the fridge.
