Ingredients

  • ½ a butternut squash
  • 1 red onion
  • 1 pack of sausages (I used chicken sausages)
  • 2 cloves of garlic
  • 100g quinoa
  • 1 tin of tomatoes
  • 1 tsp mixed herbs
  • Vegetable stock pot/cube
  • 300ml water

SAUSAGE AND SQUASH CASSEROLE

PREP TIME : 10 MINS (SERVES 2-3)

This is so easy (obviously, it’s a slow cooker), but is far from simple tasting. Use whatever type of sausages you fancy and add in any extra veg you want.

Method

Slice the squash into evenly sized slices, dice the red onion and mince the garlic.

Place in the slow cooker with the quinoa, tin of tomatoes, stock pot, herbs & salt and pepper to taste & water and stir together. Mix in the sausages and leave on low for 6-8 hours or high for 4-6.
