
Ingredients
- 3 bananas
- 125g butter
- 2 eggs
- 125g caster sugar
- 180g self raising flour
- pumpkin spice mix: 1 tsp ground cinnamon; 1/4 tsp ground nutmeg, 1/2 tsp ground ginger, 1/4 tsp ground cloves
- 2 handfuls candied pecans
PUMPKIN SPICE BANANA BREAD
Timing: 15 mins prep, 35-40 mins bake.
It’s autumn lockdown dream. Also, the candied pecans are worth making. Trust me.
Method
Pre heat the oven to 160C fan.
Peel & mash your bananas in a bowl with a fork until smooth (the more lumps in the bananas, the more likely your banana bread will fall apart when you slice it).
Melt the butter (in the microwave or in a pan) and combine with the sugar. Add the mix to the mashed bananas with the eggs and stir to combine.
Add the flour & spice mix to the bowl and fold together. Break/chop up the candied pecans and fold 2/3 of them in to the mix. Recipe for candied pecans here.
Line a loaf tin with baking paper and pour the banana bread mix in to the tin. Sprinkle the remaining candied pecans over the top and bake in the oven for 35-40 mins until risen & a skewer comes out clean.
Leave to cool for 10 mins in the tin before turning out.
