• 1/2 pack spinach & ricotta tortellini
  • 1 tbsp sundreid tomatoes
  • 30g feta/mozzarella/cheese of choice
  • 2 handfuls salad leaves
  • 1 tbsp olive oil
  • + whatever veg you have kicking around to throw in; tomatoes, cucumber, leftover cooked veggies, olives, peppers, mushrooms etc

Tortellini is a next level food. It’s so good. And this salad combo makes lunch time feel like Tesco has brought you an Italian delight. Change up the additions for whatever you like/have in the fridge.


Boil the tortellinis for the time listed on the pack.

Prepare you veggies of choice, cube, dice, slice, however you like them.

Drain the pasta and add to the bowl with the veggies, olive oil & salt and pepper and toss together. Add the salad leaves & cheese and toss together again.

Add any sauces you like, and/or extra cheese like me, and enjoy!
