• 1 fillet of frozen salmon
  • 1 rice noodle nest
  • 2 handfuls shredded ‘slaw’ veg
  • 1 handful salad leaves
  • 1 tbsp sesame oil
  • 1 tbsp soy sauce
  • sesame seeds


PREP TIME : 10 mins. SERVES: 1

This is impressively easy & simple to do. You can make it ahead of time for a Tupperware-on the go lunch, or make it at work or home. You only need a kettle & microwave. I like to add extra soy sauce, and finish with spicy mayo, cos I am obsessed with both of those things But you can add what ever you want.


Cook the salmon in the microwave per packet intrsuctions (usually just takes a few minutes!)

Pour boiled water over the rice noodle in a bowl, leave for 4-6 minutes or until soft, then drain.

Add the sesame oil & soy sauce to the noodles, along with the shredded veg and toss everything together.

Serve the noodle mix on top of the salad leaves, and then add the salmon.

Finish with the sesame seeds & any extra sauce you fancy to feel all cheffy.
