• 2 eggs
  • 1 tbsp pesto
  • handful of tomatoes
  • boiled potatoes (optional)
  • 1/2 tin chickpeas
  • handful of rocket


PREP TIME : 10 mins. SERVES: 1

This is an ideal working from home lunch. The potatoes are a nice addition if you have left over ones to use up, but you can just leave them out, or add extra chickpeas/white beans! For extra lazy girl points, eat straight out the pan.


Heat a medium pan and add the pesto, and a little extra oil from the jar. 

Halve the tomatoes (& potatoes if using) and add to the pan. As the tomatoes start to cook and the pesto melts, add in the chickpeas, stir and then make space for two holes and crack in the eggs.

Cover the pan with a lid for a few minutes until the eggs cook all the way through.

Top with the rocket & some salt and pepper.

Enjoy with bread or on it’s own.
