
Ingredients
- 1 tin of tuna
- 2 boiled eggs
- handful cherry tomatoes
- 2-3 handfuls salad leaves
- 1/3 of a cucumber
- 2 tbsp sliced pitted black olives
- whatever dressing you like

To call this a nicoise is a push. But, it’s similar, and gives you an idea what to expect. There’s so many days I need to eat something that tastes good, but don’t have much time, this lazy girl salad is quick, easy, nutrient filled and so so tasty.
Method
Slice the boiled eggs into quarters & drain the tin of tuna.
Cut the tomatoes in half or quarters, and cut the cucumbers to chunks.
Put the salad leaves in your bowl, add the tomatoes & cucumber. Followed by the eggs, tuna & olives. Add your favourite dressing, some salt & pepper and you’re good to go.
I like to have some bread alongside, but you can pair with whatever you want.
You can also chuck in anything you have in the fridge when you need to, avocado, beetroot, leftover roast veggies, potatoes, etc.
