
Ingredients
- 90g king prawns
- 2 tsp coconut oil
- 1/2 pack microwave coconut rice (or cooked rice)
- 1/2 tin of kidney beans
- 80g frozen peas
- 1 garlic clove
- 3-4 tbsp jerk sauce, or 3-4 tsp of jerk seasoning
- 1 lime
JERK PRAWNS WITH RICE AND PEAS

This is part of my ‘meal for one’ venture. A lot of the time cooking something nice just for yourself can feel like a waste of time. I’m here to challenge that. You deserve dinners just as boujee as your dinner party guests. So here’s a spicy n ricy dish to make you feel treated, that’s super quick to make. It’s also an easy one to make double, and save for the next day.
Method
Mince the garlic and add to a pan with the coconut oil over a medium heat. Add the rice (if using microwave rice, break it up in the packet before opening and use a fork to squash it in to grains in the pan.).
Drain the kidney beans and add to the rice, with the frozen peas. Stir.
After a few minutes, add the prawns & jerk sauce/seasoning and stir. If the prawns are already cooked, just leave enough time for them to heat through, if they’re raw, wait until they turn from grey to pink (5-8 mins).
Add the zest of the lime, followed by the lime juice and season with salt & pepper.
