Ingredients

  • 5 slices of halloumi
  • 1/2 an avocado
  • roasted red & yellow peppers
  • 2 handfuls salad leaves
  • 1/2 pouch of lentils
  • 1 handful of basil leaves
  • chilli jam
For the dressing:
  • 1 tbsp olive oil
  • 1/2 tsp dijon mustard
  • 1/2 tsp wholegrain mustard
  • 1 tsp honey
  • 1/2 tbsp white wine vinegar
  • salt & pepper
 

HALLOUMI & ROASTED PEPPER SALAD

PREP TIME : 15 mins. SERVES: 1

The easiest salad for a filling & satisfying meal when you don’t have much time, don’t know what to make, or just cba. It’s super simple and probably my go to meal when I have 0 motivation or inspiration to cook. If you wanna add an extra texture, try a dollop of greek yoghurt. 

Method

To make the dressing: place all the ingredients in a jar and shake thoroughly until combined & smooth.

Heat a frying pan and sear the halloumi until golden on both sides & set aside. 

Heat the lentils per pack instructions and add the base of a bowl with the salad leaves & basil leaves; top with the roasted peppers, sliced avocado & halloumi. 

Finish with your dressing, the chilli jam and munch munch munch.
