Ingredients

For the marinade:

  • 300g pork/lamb/chicken/tofu
  • 1 tbsp yoghurt
  • ½ tsp paprika
  • ½ tsp ground cumin
  • ½ tsp ground coriander
  • 1 tsp oregano
  • ½ tsp cayenne (if you like spice)
  • 3 minced garlic cloves
  • 1 tbsp olive oil

For the tzatziki:

  • 2 tbsp thick Greek yoghurt
  • ¼ cucumber
  • Handful of mint leaves
  • 2 minced cloves of garlic
  • Black pepper

To assemble:

  • 2 wraps/flat breads
  • 4 handfuls of salad
  • 2 large tomatoes
  • ¼ of a cucumber
  • 1 red onion
  • Tbsp black olives
  • Slices red/green peppers

GREEK GYROS

PREP TIME : 15 MINS, COOK TIME : 20 MINS (SERVES 2)

I won’t pretend this is as good as the real thing but daaaamn is it a good imposter. You can add in whatever extras you like and change around your proteins for whatever you want.

Method

  1. Combine all the marinade ingredients together, add your protein of choice and leave for around 30 minutes/however long you have (you can do this overnight if you want to!).
  2. Prep the tzatziki by grating the cucumber & squeezing the excess liquid away. Stir together with everything else.
  3. Cook your protein in a pan until cooked through (time dependent on type & size of pieces!) about 5-10 mins on each side.
  4. Assemble your gyros, with the remaining ingredients, I like to pile everything in to one so big I can barely fit my mouth around it.
