Ingredients

  • 100g butter
  • 70g brown sugar
  • 70g caster sugar
  • 2 tbsp golden syrup/honey
  • 1 egg
  • 150g oats
  • 2 tsp cinnamon
  • 2 tsp ground ginger
  • 1/2 tsp nutmeg
  • + sultanas/dried cranberries/chocolate chips
  • chocolate for drizzling, I used white

GINGERBREAD FLAPJACKS

Prep: 10 mins. Bake: 20 - 25mins

All the festive vibes wrapped up in a flapjack. Even if you aren’t a major gingerbread fan, these flapjacks are sweet and warming and you should definitely make them. Recipe makes 8 bars.

Method

Preheat the oven to 170C.

Melt the butter with both sugars & the syrup/honey.

Pour in to a bowl with the oats & stir, before adding the egg and mixing thoroughly.

Add all the spices (you can adjust this to taste) + any extra you’re using (dried fruit/chocolate chips).

Transfer into a lined baking tray and push down with the back of a spoon until the top is flat.

Bake for 20 mins.

Allow to cool then cut in to 8 bars (or more/less).
Melt the chocolate and drizzle over the top.
