- 2 slices of bread (slightly stale works better!)
- 2 eggs
- 1/2 tsp cinnamon
- 2-3 tbsp milk
- 1 tbsp icing sugar
- + toppings!
PREP TIME : 10-15 mins. Serves 1
It’s just the best isn’t it.
Whisk the eggs, milk & cinnamon with half the icing sugar until smooth.
Soak the bread on both sides until all the mix is gone (this is easiest done on a large plate with a lip to stop spill, or a tray with a higher side – bowls aren’t shaped for bread).
When soaked, heat on a medium flame in a non stick pan, cook for 3-4 mins until the bottom is golden & crispy, then flip. Sprinkle over some icing sugar and flip each side again to get a caramelised crust,
Top with whatever you fancy – I’ve got vanilla yoghurt, plum compote, fresh blueberries, mixed seeds & maple syrup.
