- 100g flour
- 2 eggs
- 300ml milk

Not just for pancake day/
In a bowl combine the eggs & flour. Add a small amount of the milk and whisk together. Continue to whisk adding small amount of milk as you go.
When all the milk is used you should have smooth batter, the consistency of cream.
Heat a non stick pan over a medium flame. Add a ladle of batter to the centre and swirl the pan to cast the base. If you don’t have a nom stick pan, use a piece of kitchen paper to rub oil over the surface of the pan between pancakes.
When small air holes start to appear on the surface, flip the pancake and leave for another minute or so before removing.
Repeat until all the batter is used.
Top with your choice of toppings! I like; fruit, berries, Nutella, nut butter, yoghurt, seeds, honey, syrup, chocolate chips, cinnamon sugar. And that’s just on one…
