• 85g butter
  • 85g caster sugar
  • 85 dark chocolate
  • 3 eggs
  • 85g ground hazelnuts (or almonds)
  • 3 pears
  • 50g chopped or sliced hazelnuts


Prep time: 15 mins. Bake time: 40 mins

Tart or torte? A tart typically has a pastry base and can be sweet or savoury, whilst a torte is much more like a cake and is often made of multiple layers. This one doesn’t have layers, but it is delicious. And that’s more important.


Grease a round cake tin (spring form if you have one) and pre heat the oven to 160C fan.

Melt the chocolate and butter together in a bowl over a Bain Marie. Set aside and allow to cool while you do the rest.

Separate the eggs. Combine the yolks with the sugar and whisk with an electric whisk until fluffy & pale.

In a clean bowl (with a clean whisk), whip the whites to a soft/foamy peak.

Fold the yolk mix with the chocolate mix, add the ground nuts and fold through. Then fold the chocolatey batter in to the whites.

Pour in to the lined tin. Peel, halve & remove the cores from the pears. Place on the top in whatever pattern you like. Scatter chopped or sliced nuts over the top and bake for 40 mins.

I like to grate dark chocolate over the top while it’s still slightly warm.
