• 3 eggs
  • 50g sugar
  • 2 tbsp coconut oil
  • 2 carrots
  • 1 apple
  • 150g oats
  • 75g plain flour
  • 1 tsp baking powder
  • 1 handful sultanas
  • 1 handful chopped walnuts
  • 1 tsp cinnamon
  • ½ tsp nutmeg




  1. Combine 3 eggs, 50g of sugar and 2 tbsp of melted coconut oil in a bowl and whisk. Grate in 2 carrots and 1 apple (I only had half an apple, so I used half, but use whatever you’ve got). Stir til combined.
  2. Add 150g oats and 75g plain flour, 1 tsp of baking powder and fold through. Add 1 handful of sultanas, 1 handful chopped walnuts, 1 tsp cinnamon and 1/2 tsp nutmeg. I also added some coconut shavings here cos I love em, but that’s optional.
  3. Pour in to a baking tray lined with baking paper. Bake at 180C fan for 35 minutes.
  4. Allow to cool before cutting in to 12 squares. I like to top mine with cream cheese mixed with orange zest & honey and a sprinkle of cinnamon.
