- 40g oats
- 1 small carrot
- 1 egg
- 100ml milk
- ½ tsp cinnamon
- ¼ tsp nutmeg
- 1 tbsp sultanas (optional)
- ½ tbsp chopped pecans/walnuts
CARROT CAKE BAKED OATS

Combine the egg & milk in a bowl. Stir in the oats.
Grate the carrot in to the mix & stir. Next add the cinnamon, nutmeg, chopped nuts & sultanas and make sure everything is combined.
Transfer into a small oven proof dish. Bake at 180c for 20 mins.
A selection of my favourite toppings are: yoghurt, berries, fruit, nut butter, chocolate chips, chopped nuts, mixed seeds, honey, maple syrup, Biscoff spread, bee pollen.
