
Ingredients
- 2 ripe bananas
- 100g oats
- 1 tsp baking powder
- 1-2 tbsp cocoa powder
- 2 handfuls chocolate chips
- 100ml milk
- 50g chocolate protein powder (optional)

Need more breakfast inspo? What about a breakfast cookie. They’re oaty and delicious and a bit of a change from the usual breakfast options. Don’t want chocolate? Try adding cinnamon, honey & raisins instead. I like mine with Greek yoghurt, fresh fruit & berries.
Method
Pre heat the oven to 180C fan.
Peel and mash up the bananas with a fork until soft. Add the oats & baking powder and stir.
Combine the cocoa powder & milk together, add the protein powder if using – depending on the type & brand of protein powder you made need more milk, the consistency should be like a runny paste.
Add the cocoa mix to the oat mix, with the chocolate chips and stir. You could also add things here like chopped nuts, dried fruit, coconut flakes, seeds etc. Go wild.
Line a baking tray with paper, and create 8 cookie circles.
Bake for 8-10 mins until dry on top. Store airtight, ideally in the fridge and consume with 2 days!
