Ingredients

  • 200g self raising flour
  • 1.5 tsp baking powder
  • 3 eggs
  • 25g butter
  • 1 tbsp sugar
  • 200ml milk

BIG FLUFFY PANCAKES

PREP TIME : 15-20 mins.

Personally, I like a big fluff of a pancake. Crepes are great and everything, but nothing quite says ‘it’s the weekend’ like a big stack of golden discs. Drowned in syrup. And all the other stuff. This recipe makes 8 pancakes. You can decide how many people that feeds.

Method

Firstly combine the flour, baking powder & sugar.

Whisk the eggs together and pour in to the flour, whisking as you go.

Melt the butter and add to the mix. Followed by the milk, whisking as you go until you get a thick batter.

Heat a non stick pan on a medium flame and spoon in 2 large spoonfuls/1 ladleful of mix per pancake. If your pan is big enough to do multiple at a time, make sure they have room to spread & grow in-between.

When you start to see bubbles of the surface (2-3 mins), gently flip them over using a spatula. Leave for another 2-3 mins. Remove from the pan and repeat until all the mix is used.

To keep them warm in-between, cover with foil. If you’re making them one at a time, turn you oven on to it’s lowest heat and keep them in there whilst you make the others.

Add your toppings and devour.
